How does it work?  Like all good inventions it's quite simple. Top and bottom heat is provided by the clever three piece design. The central aluminium food holder for baking or roasting is ring shaped like a sponge cake tube mould. The treated-steel base plate provides the bottom heat while the aluminium lid with ventilation holes is designed to give cake and bread space to rise and of course to contain the top heat. Hot convection currents are created by the hob and collected by the top and bottom sections to give top and bottom heat as illustrated right. An air lock between the base plate and the food holder creates the bottom heat and the central cone-shaped hole funnels hot air over the top of the food to give the top oven heat. Perfect once you get used to the idea of cooking things in a ring rather than in a square!  Plainly you can't roast a chicken in a ring but roast loin of pork or roast chicken pieces are perfectly possible.
